Hey, I get what you're going through! My 2020 Seat Ibiza had a similar problem with sluggish acceleration and poor fuel economy. It turned out to be caused by heavy contamination in the intake channels. The garage had to do a complete clean out of the intake manifold to get rid of the gunk clogging up the works. They also had to replace the intake manifold gasket, which involves quite a bit of labour on their part. But trust me, after the work... the poor start, the jerky riding, the whole shebang, everything was sorted out. It was a serious issue, to say the least, preventing the engine to breathe properly and couldn't burn fuel efficiently. But don't stress yourself too much, it's a relief that it's a fixable issue. I'd recommend getting a thorough clean as soon so that you don't mess up the engine any further. Good luck!
