Hey, sounds an awful lot like a similar problem I had on my 2017 Mazda6 not so long ago. Engine instability, rough acceleration, stalling - the whole shebang. Even the same engine light disco and the way my exhaust smelled was enough to tag a skunk as 'fresh.' Like your gut, mine pointed towards fuel pressure too. But when I finally gathered enough courage to head to the garage, they found out it was an issue with the car computer not reading the fuel pressure properly following a fuel filter change. Apparently, once the fuel filter was changed, the system needed a manual reset. There was no massive mechanical failure as I expected. The guys sorted it out by resetting the system through the car's computer, adjusting the fuel pressure, and tidying up the fuel pressure readings. Yup, no heavyweight issues. Runs like a dream now, smooth as a baby surfboarding on cream. Trust ya gut, but also trust the mechanic. Errors following a filter change are rarer than a bad bratwurst, but not impossible.
