After looking into several shops, I finally found a reputable mechanic who properly diagnosed and fixed my S Type. The total repair came to 520€, which included replacing the intake manifold flap control unit and a complete system cleaning. The air intake system needed serious attention. The mechanic showed me how carbon buildup had basically frozen the flap control mechanism. No wonder the engine performance was suffering. They did a thorough job cleaning the entire intake manifold and replaced all worn seals. The difference is night and day. No more hissing sounds or power loss, fuel economy is back to normal, and the engine runs smooth as silk.
