Took it to my trusted mechanic and it turned out to be a faulty ambient temperature sensor connection. The cable had worked itself loose over time and was giving incorrect readings to the climate control system. The fix wasn't particularly complex, they had to remove some trim pieces to access the connection point, clean the contacts, and secure the plug properly. Not a serious repair at all, but definitely something that needs proper attention since it affects the whole climate control system.
