In the case of my Leon at least, it was the defect in the misting sensor that caused the heater and mirror de-icer to operate incorrectly. After the sensor was replaced, everything worked perfectly again. Replacing the sensor at my garage was quite straightforward and not particularly expensive. So, I would recommend that you consider it. Just tell the garage that you suspect the condensation sensor might be faulty and they should know what to do.
